Deep Fried Sweet Potatoes with Sweet and Spicy dipping SaucePreferably, the night before serving.....(if unable to do it that far in advanced, at least soak for a couple of hours)  Peel and cut 2-3 sweet potatoes into french fry strips. Then cover completely in water and add 1/2 cup of brown sugar, 2-tsp cinnamon, and 3 TBSP salt. Soak overnight. When ready to cook, drain potatoes on wire rack, then pat dry. Heat oil for deep frying to around 350 degrees. Fry potatoes until tender. Serve with sweet and spicy sauce

Here is the elusive Sweet N Spicy dipping sauce for the fried sweet potatoes.

1 Cup Sour Cream
1/2 C. Caramel Sauce
2 TBSP Poppy Seed Dressing
1/4 tsp. Ceyenne Pepper
1/2 tsp. Chopped fresh Tarragon
1/8 tsp. salt
Mix all ingredients together until blended and start DIPPIN' !
