Simple Shepard’s Pie

Borden for Bruno’s Supermarkets

Serves 4 Time 30 minutes

  • 2 packages Bob Evans brand Mashed potatoes
  • 2 tablespoons sour cream or softened cream cheese
  • 1 large egg yolk
  • ½ cup shredded cheddar cheese
  • ¼ cup chicken or vegetable broth
  • Salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil or cooking spray
  • 1 3/4 pounds ground beef (turkey, lamb or a combination work as well)
  • 1 carrot, peeled and chopped finely
  • 1 onion, chopped finely
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef stock or broth
  • 2 teaspoons Worcestershire
  • 1/2 cup frozen peas, a couple of handfuls
  • 1 teaspoon sweet paprika

Directions

In a large bowl combine softened cream cheese, egg yolk and shredded cheddar. Add the two packages of potatoes and mix until combined thoroughly. Heat mixture in microwave for 4-5 minutes.

Preheat a large skillet over medium heat with olive oil, add chopped carrots and cook for about 2 minutes stirring frequently. Add onions and saute for an additional 2 minutes. Add ground beef. and season mixture with salt and pepper. Crumble beef and cook until browned. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned..
